They produced about 100 bushels of salt a week in 1807! The site is in Howard County MO where Fayette, MO is the county seat. "Archaeological Investigations at the Area Directly North of the Old Courthouse in Arrow Rock, Missouri," by Thomas Holland and Christopher Pulliam. (22 pages.) They found evidence of a general store with material dating from 1830 to 1900. The reports include maps and photo illlustrations of the salt works site.
